Hash de Palmito Fresco con Camote Dulce y Ahumado
This sweet and smokey hash is a quick and easy way to enjoy fresh hearts of palm with some other fragrant and flavorful ingredients.
Ingredients
1lb fresh heart of palm, sliced
1 large sweet potato, cubed small
½ yellow bell pepper, diced
½ red bell pepper, diced
1 small red onion, diced (makes about ½ cup)
2 tsp smoked paprika
3 tbsp olive oil
Coarse sea salt and fresh ground pepper to taste
Parsley for garnish
Instructions
Preheat oven to 375°
Mix all ingredients in a large bowl until the oil and spices are distributed evenly
Spread out all ingredients on a parchment paper lined cookie sheet and bake for 17-20 minutes.
Remove from oven and let cool off for a few minutes
Serve, garnish with parsley, and enjoy!
